Caramel Apple Cobbler

Another recipe mom made while we were home… SO easy and delicious!  Be sure to serve with vanilla ice cream.

Ingredients:

- 2 cans caramel apple pie filling

- 1 cake mix (white, yellow, butter recipe—your pick)

- 2 stick of melted butter OR a can of sprite

Directions:

1- Spray 8x11 casserole dish and spread apples into the bottom.

2- Sprinkle dry cake mix over the top of the apples.

3- Pour melted butter evenly over the top of the cake.

4- Bake until golden brown—45 to 5o minutes.

 

Tips from a Kitchen of Reality:

1- We’ve made it with sprite and butter—both work and taste great.

2- You can use any flavor cake mix—but with the caramel apple pie filling, the spice cake mix is delicious!!

3- This recipe can be used for ANY type of fruit cobbler.

Apple and Sweet Potato Casserole

This recipe just sounded like fall to me so I gave it a try. I enjoyed a new twist with two of my favorite fall things, see what you think!

Ingredients:

1 Tbsp. unsalted butter
½ cup sugar (brown or white)
1 tsp. ground cinnamon
¼ tsp. fine sea salt
3 medium sweet potatoes
3-4 sweet, crisp apples (Like Gala or Honey Crisp)

Directions:

Preheat oven to 35o°F. Butter a 9″ x 5″ loaf pan.
Stir together the sugar, cinnamon and salt; set aside.

Peel and thinly slice the potatoes, then the apples. Line the bottom of the pan with a layer of sweet potatoes, overlapping the slices to limit breaks/holes. Next, add a layer of apples. Sprinkle with the cinnamon mixture. Repeat the layers, potatoes, apples, cinnamon sugar, until the pan is filled.* Top with another sprinkle of cinnamon sugar.

Bake 35-45 minutes, until a knife can cut through without much resistance. Let sit for 10 minutes before cutting and serving.

Tips from a Kitchen of Reality:

Mine needed more baking time, but it was still really good.

Grape Salad

While this didn't sound appealing to me, I loved it when a coworker brought it to a potluck last week. I think I'll serve it in a pretty glass bowl instead of a 9 X 13 pan.


Ingredients:
4 cups each seedless red and green grapes

8 oz sour cream

8 oz cream cheese

½ cup sugar

1 Tbsp vanilla

¾ to 1 cup chopped pecans

1 cup light brown sugar


Directions:
Mix sour cream, cream cheese, sugar and vanilla. Stir in halved grapes. Place in 9 X 13 glass dish. Top with brown sugar and pecans.

Apple Cake

Although it seems like it is slow getting here, fall is right around the corner and we are already enjoying some yummy mountain apples at our house. I had a few too many for us to eat this weekend, so before they went bad, I decided to pull out a recipe I hadn't made in a couple years. Hope you enjoy it!

Ingredients:
Cake:
3 cups sugar
1 1/2 cups oil
3 eggs
2 tsp vanilla
3 cups flour
1 tsp baking soda
1 tsp salt
3 cups sliced apples

Topping:
1/2 cup brown sugar
1/2 cup sugar
1/2 cup butter
1 cup water
2 Tbsp flour
1 tsp vanilla

Directions:
- Mix all cake ingredients together and bake in a 9x13 pan for 45 minutes.
- When cake is almost done baking, melt the butter on the stove top and then add the rest of the topping ingredients. Cook, stirring often, until the mixture gets lighter in color, about 10 minutes.
- Take cake out of oven, and immediately poke holes with a knife every 2 inches or so across the cake then pour the carmel like topping onto the cake.
- Allow to sit 15 to 20 minutes and enjoy warm with vanilla ice cream.

Tips from a Kitchen of Reality:
- Using different kinds of apples definitely changes the flavor of this cake. I love green tart apples for this recipe, like Granny Smith, but any kind will do.
- Pouring the carmel topping on while the cake is still really hot, definitely makes a better cake, so don't let it cool.

Cheese Apples

Here's another fall recipe for you, especially great since we're almost in the middle of APPLE season! This recipe sounds weird but it is yummy!! (This is not a low calorie/fat recipe!! It's like having dessert included with your fruit for dinner.)

Ingredients
- 2 cans fried apples
- 1 stick butter
- 1 cup sugar
- 3/4 cup self rising flour
- 8 oz Velveeta Cheese

Directions
Melt butter and sugar over medium heat until well blended. Lower heat and add flour and cheese. Pour over the apples in a casserole dish and bake at 350 for 30-40 minutes.
